No ice cream maker needed, one Ingredient dairy free ice cream

Guess what? You can make 100% guilt free ice cream made out of one single ingredient...BANANAS.

Who would've thought this staple fruit that we eat plainly on a daily basis can magically transform into a creamy, sweet treat that's actually good for you?

Is there a catch? No, not really. The only criteria that I can't emphasize enough is to use ripe bananas. I'm talking brown spots all around with a black stem. Why you ask? Because the fruit is at its sweetest and they are most easily digested at that state. Trust us on this one, don't skimp this step.

Ingredients

  • As many ripe banana’s as you’d like (2-3 for a snack, 4-6 for a meal…yes I said meal. This has been my breakfast for the past 9 months).

Tools

  • Glass bowl or freezer safe bag

  • Food Processer or high speed blender (blend at your own risk, I have broken 3 non high speed blenders because of this)

  • A freezer

  • Glass serving dish

Method

  • Unpeel and chop up the banana’s

  • Throw them into a freezer safe bag or a glass bowl

  • Wait 2 hours – overnight for them to fully freeze

  • Take your food processer or high speed blender and chuck the bananas in there

  • Start blending. You will notice, there will be a stages to the bananas (throughout the blending process you might have to stop and scrape down the sides)

1st phase will be crumbly and chunky

2nd phase will be gooey with unblended bananas in the mix

3rd phase will be creamy and smooth like ice cream consistency

  • Pour the “ice cream” into a glass Tupperware or serving dish

  • Stick it back in the freezer for up to an hour (or longer) for a thick texture. You can always eat it right after its blended, but it will have a soft serve consistency

  • Enjoy!

Tip

Feel free to mix any add in or toppings! The options are limitless, but here are a couple ideas:

  • almond, walnuts, pecans

  • cocoa powder

  • vanilla bean and/or extract

  • cinnamon, cloves, nutmeg, pumpkin pie spice

  • a chunk of ginger

  • 1 other fresh fruit (berries, mangos, even apple)

  • 1 tbsp. of almond butter
